Baked Sole

Baked sole goes well with rich pasta or baked potatoes, and greens.

Yields 4 servings

Cholesterol: 131 milligrams

1 egg, well beaten

¼ cup skim milk

½ teaspoon salt

4 4-ounce sole fillets

¾ cup bread crumbs

1 lemon

Preheat oven to 400°F.

Combine eggs, milk, and salt in small bowl.

Dip the sole in the egg mixture and then roll in bread crumbs.

Place breaded sole on a baking sheet and bake for 20 minutes or until fish flakes.

Sprinkle fillets with fresh lemon juice to taste.
